Gluten Free Pancakes

Do you suffer from gluten intolerance or coeliac disease and miss pancakes in your life? I know I do, but also know that you shouldn’t have to go without. We’ve got a great Gluten Free Pancake recipe for you to try that doesn’t involve any gluten and tastes delicious.

You will need:

  • 2 eggs or 3 egg whites
  • 1⁄2 cup almond meal
  • 1⁄4 cup ground flaxseed
  • 1 tbsp psyllium husk
  • 1⁄2 mashed banana
  • 1 tsp of vanilla extract
  • 1 tsp cinnamon
  • 1⁄3 cup crushed walnuts
  • 3-4 tbsp almond milk
  • Handful of berries
  • Coconut/greek yogurt

Just 5 Easy Steps:

  1. Add all the ingredients into a bowl and whisk thoroughly.
  2. In a non-stick frypan add 1/2 tsp of organic coconut oil
  3. Spoon mixture into the frypan to the desired size of your choice
  4. Cook for 3-4 minutes on each side.
  5. Top with fresh berries and yogurt.
