Gluten Free Banana Pancakes

Gluten-Free Banana Pancakes are a yummy way to enjoy breakfast without gluten!

The 13th- 20th of February is Coeliac Awareness Week. Suffering from coeliac disease can be debilitating, and can often have you feeling alone and like you’re missing out. We hear lots of people who suffer from coeliac hate that they miss out on foods like bread and pancakes. We have put together a delicious, healthy gluten-free pancake recipe for you to enjoy!

You will need:

  • 2 eggs
  • 1 cup of coconut four
  • 2 ripe banana’s mashed
  • 1 teaspoon of cinnamon
  • Dash of Almond Milk
  • Coconut oil for fry pan

What to do:

  • In a large bowl mash the bananas, then whisk in the cup of coconut flour and 2 eggs. Once whisked together heat the frying pan and add coconut oil. Cook on medium to high heat.
  • Optional- add 1 scoop of your choice of protein powder for the extra protein in your diet.
  • Top with fresh berries!
