Gluten Free Pancakes

Do you suffer from gluten intolerance or coeliac’s disease and miss pancakes in your life? I know I do, but also know that you shouldn’t have to  go without. We’ve got a great pancake recipe for you to try that doesn’t involve any gluten and taste delicious.

You will need:

  • 2 eggs or 3 egg whites
  • 1⁄2 cup almond meal
  • 1⁄4 cup ground flaxseed
  • 1 tbsp psyllium husk
  • 1⁄2 mashed banana
  • 1 tsp of vanilla extract
  • 1 tsp cinnamon
  • 1⁄3 cup crushed walnuts
  • 3-4 tbsp almond milk
  • Handful of berries
  • Coconut/greek yoghurt

Add all the ingredients into a bowl and whisk thoroughly.

In a non- stick fry pan add 1/2 tsp of organic coconut oil

Spoon mixture into the fry pan to the desired size of your choice

Cook for 3-4 minutes each side.

Top with fresh berries and yoghurt.
